12 Dishes Till Christmas With Chef Nkesi – Very Cherry Merry Cheesecake

Hey people, I’m still giving away 12 of my fave recipes in the countdown to Christmas and today is your lucky day because this one right here is oh so divine!

Again it looks super impressive but is really quite easy to put together. The oven and refrigerator actually does more than half of the work.

Ok so let’s get right into it,

What you need

– 900g soft cream cheese
– 2 cups fresh cherries or 1 canned cherry
– 2 tsp lemon juice
– 3 tbsp all purpose flour
– 1 tsp vanilla extract
– 3 large eggs and one extra yolk
– 1 cup caster sugar
– 1 cup sour cream
– A full pack of digestive biscuit
– 250g melted butter

 

How To

– preheat oven to 200ºc.

– in a food processor, blend the biscuits until fine, pour in a bowl and mix with the melted butter.

– using a 9inch cake pan with a side latch (this makes it easier to release the cheesecake) lined with baking paper, pat the biscuit mix in  a layer at the bottom of the pan and place in the freezer to set.

– place the cream cheese in a bowl and, using an electric whisk, whisk till the cheese is nice and smooth.

– add your flour and sugar and continue to mix making sure there are no lumps.

– add your eggs, vanilla extract and lemon juice and mix well.

– finally add the sour cream.

– when your mixture is ready, remove the pan from the freezer and pour the cheesecake mixture into the pan onto the biscuit base.

– place in the oven and allow to bake for 10 minutes, then reduce oven to 90ºc and bake for another 30mins.

– you know your cake is ready when you touch it and its slightly firm.

– remove from oven and allow to cool down, then place in the fridge for 4 hours or preferably overnight.

 

The cherry filling

– if you are using canned cherries, then just pour on top of the cheesecake when you are ready to serve.

– if using fresh cherries, place the cherry in a saucepan over medium heat with a quarter of a cup of sugar and a tbsp lemon juice.

– allow cook for 7 – 10 minutes, until the cherries are nice and soft and their juices have been released.

– allow to cool down, then pour over the cheesecake when you are ready to serve.
